Pētījuma aktualitāte: Pašreizējā pārtikas sistēma rada būtisku slogu videi un veicina neveselīgus uztura paradumus, kas saistīti ar hronisku slimību izplatību. Pieaug interese par graudaugiem ar augstu uzturvērtību un bioaktīvu savienojumu saturu, īpaši auzām un miežiem. Pētījumi par šo graudaugu sastāvu un ieguvumiem ir būtiski sabalansēta uztura veicināšanai un ilgtspējīgas, vietējās pārtikas attīstībai.
Pētījuma mērķis: Noteikt Latvijā audzētu auzu un miežu produktu sastāvu, nosakot bēta-glikānu daudzumu, kopējo fenola savienojumu saturu, antioksidatīvās īpašības un atsevišķu bioaktīvu savienojumu klātbūtni.
Pētījuma hipotēze: Auzas satur vairāk bioaktīvo vielu un tām piemīt augstāka antioksidatīvā aktivitāte nekā miežiem.
Pētījuma metodes un dizains: Pētījums ir kvantitatīvs un eksperimentāls, veikts Rīgas Stradiņa universitātes Bioķīmijas zinātniskajā laboratorijā no 2024. gada decembra līdz 2025. gada martam, analizējot 17 auzu un miežu produktu paraugus – vienpadsmit no zemnieku saimniecības “Kotiņi”, kas audzēti un ražoti Balvu novadā un seši no lielveikalos pieejamajiem, kas audzēti visā Latvijas teritorijā.
Rezultāti un secinājumi: miežu produkti – īpaši klijas, grūbas un putraimi – satur augstāku kopējo fenola savienojumu koncentrāciju, augstāku antiradikālo aktivitāti un ferulīnskabes saturu, salīdzinot ar auzām. Miežu kliju ABTS kation-radikāļa pārtveršanas spēja bija gandrīz sešas reizes augstāka nekā auzu klijās. Augstākais bēta-glikānu saturs tika konstatēts auzu un miežu grūbās, savukārt miežu pērļu grūbas, neatkarīgi no izmēra, uzrādīja līdzīgas vērtības gan kopējo fenolu savienojumu koncentrācijā, gan antioksidatīvajā aktivitātē, gan bēta-glikānu saturā.
Rezultātu praktiskā pielietojamība: pētījuma rezultāti apliecina Latvijā audzētu auzu un miežu produktu potenciālu, uzsverot iespēju izmantot vietējos resursus ar augstu kopējo fenola savienojumu, antioksidatīvo aktivitāti un bēta-glikāniem, tādējādi veicinot gan sabiedrības veselību, gan vietējo pārtikas ražošanu.

Title: Bioactive Substances in Oat and Barley Products Grown in Latvia: Beta-Glucan and Phenolic Compound Content, Antioxidant Properties, and the Presence of Selected Bioactive Compounds. Increasing attention is being paid to cereals with high nutritional value and bioactive compound content, particularly oats and barley. Research on the composition and potential health benefits of these cereals is crucial for promoting a balanced diet and developing a sustainable local food system. Objective: To determine the composition of oat and barley products grown in Latvia by analyzing the content of beta-glucans, total phenolic compounds, antioxidant properties, and selected individual bioactive substances. Hypothesis: Oats contain more bioactive substances and exhibit higher antioxidant activity than barley. Methods and Design: The study is quantitative and experimental, conducted at the Scientific Laboratory of Biochemistry of Rīga Stradiņš University between December 2024 and March 2025. Seventeen samples of oat and barley products were analyzed — eleven from the farm "Kotiņi" (grown and processed in the Balvi region) and six from commercial sources, grown in different regions of Latvia. Results and conclusions: Barley products — especially bran, groats, and pearl barley — showed higher concentrations of total phenolic compounds, greater antiradical activity, and a higher ferulic acid content compared to oats. The ABTS cation radical scavenging activity of barley bran was almost six times higher than that of oat bran. The highest beta-glucan content was found in oat and barley groats, while pearl barley groats, regardless of size, exhibited similar levels of total phenolic compounds, antioxidant activity, and beta-glucans. Practical applicability of the Results: The study confirms the potential of oat and barley products grown in Latvia, highlighting the opportunity to utilize local resources rich in total phenolic compounds, antioxidant activity, and beta-glucans, thereby supporting both public health and the development of local food production.
